Huevo in a Hole, a Mexican Egg in the Hole Recipe

Huevo in a Hole, a Mexican twist on the classic Egg in the Hole. You only need 3 ingredients and 5 minutes to make this crisp edged, soft centered, corn tortilla and fried egg wonder. Top it with salsa, cilantro, cheese, black beans, avocados, tomatoes…the options are endless if you’re feeling fancy. But let me assure you, though they might be a just a few humble ingredients, this combo can stand on it’s own with just a sprinkle of salt and pepper too!

Let me tell you a funny story. This blog post is actually from 2015.  It just never made it to the blog! I took the pictures. I wrote the post. I did all the work. But then I decided that a huevo in a hole wasn’t really a recipe. It was just an egg in the hole with a tortilla instead of a slice of bread. What’s special about that? The photos just weren’t quite good enough. All my self doubt got the best of me.

So here we are in 2025. And here’s what I have to tell you, this recipe is a 3 ingredient, 5 minute wonder that you can enjoy any time of day. Breakfast, lunch, dinner? Yes. My family comes back to this dish time and time again. It sure beats the heck out of it’s cousin, the breakfast burrito.

And I know this is a darn good recipe. It really is. I’ve been making this variation of an egg in the hole with corn tortillas instead of toast for over 15 years! My kids love them! 

Quick Side Note: How did such a simple breakfast dish come to be known by so many names. There are SO many variations. You’ll have to tell me what your family call them. 

Egg in a basket? Egg in a nest? These ones make sense. But then I’ve also seen frog-in a hole, and toad-in a hole! Which, to be honest, kind of seems out in left field. 

What do I need to make huevos in a hole?

Corn tortillas, cilantro, salsa, eggs, a biscuit cutter and a cutting board sitting on a counter.
  • Small corn tortillas, about 3 per egg
  • Large eggs
  • Butter, oil, or bacon grease for frying
  • Salt
  • Black Pepper
  • Optional Toppings

Step by Step Instructions:

The tortillas are stacked and the centers are cut out with the biscuit cutter.

Step 1. Stack 3 tortillas and using a biscuit cutter (or a cookie cutter) cut the center from the tortillas. 

In a skillet, the tortillas and egg are fried together in oil.

Step 2. Heat your skillet or griddle over medium heat and add about 1-2 Tablespoons of butter, oil, or bacon grease to the pan. 

Step 3. Add the stack of tortillas to the pan and let them cook for about 30-45 seconds before cracking your egg right into the hole. Season the egg well with salt and black pepper. Let it cook for 1-2 minutes or until the bottom of the egg is set. Then flip the tortilla and egg over to cook for another minute or so! 

(Feel free to leave your egg yolk a bit soft and runny if you like! That’s how I prefer them!)

The cooked egg in tortillas is plated and topped with garnishes before serving.

Step 4: Immediately move your huevo to a plate and garnish it with toppings of your choice.

  • 1 large egg
  • 2 Tablespoons butter
  • salt (to taste)
  • black pepper (to taste)

Instructions

  • Heat your skillet or griddle over medium heat and add about 1-2 Tablespoons of butter, oil, or bacon grease to the pan.
  • Add the stack of tortillas to the pan and let them cook for about 30-45 seconds before cracking your egg right into the hole. Season the egg well with salt and black pepper.   • Immediately move your huevo to a plate and garnish it with toppings of your choice. Serve.
