This simple and filling sausage and pasta dish with a big burst of Cajun flavor is a great addition to any spaghetti night and is an easy way to supply your family with a unique home cooked meal in no time!

Necessity is the mother of all invention. I created this easy Cajun Sausage Spaghetti because I had all the ingredients I needed to make a Cajun dish we like, but I didn’t have any rice!  So, I decided to change things up and make a sausage spaghetti dish instead. We all loved it! It’s easy to just throw together and pair with garlic bread and a green salad for an easy weeknight dinner that’s just a bit different.

What do I need to make Cajun Sausage Spaghetti?

  • 1 lb andouille sausage
  • 1 Tablespoon olive oil
  • 2 cloves garlic
  • 1 small onion
  • 2 bell peppers
  • 1 Tablespoon smoked paprika
  • 2 teaspoons creole seasoning
  • 1/4 teaspoon cayenne pepper
  • 1 (28 ounce) can crushed tomatoes
  • 1lb spaghetti
  • 1/2 cup heavy cream
  • 1/2 tsp sugar, optional

Step by Step Instructions:

The sausage is heated in the pot and stirred with a spatula.

Step 1: Cut the sausage in half lengthwise and then slice into half moons. Cut the onion and bell peppers into strips. 

Add the oil to a large sauté pan and brown the andouille sausage over medium heat, about 4-5 minutes. 

Meanwhile, prepare a pot with salted water and cook the spaghetti according to the package instructions.

The onions and peppers are added to the pot and stirred.

Step 2: Next add the garlic, onion, and bell peppers to the pan and cook for another 4-5 minutes or until the onion is translucent.

The seasoning is added to the pot and stirred.

Step 3: Add the spices to the pan, cook and stir for one minute longer. 

The cream, sugar, and tomato sauce is added to the pot.

Step 4: Add the crushed tomatoes, heavy cream and sugar, if desired. Stir well to combine. Turn the heat to low and simmer for 5 minutes. 

The spaghetti noodles are added to the pot.

Step 5: Stir the cooked and drained spaghetti into the sauce.

Serve topped with shredded parmesan and crushed red pepper flakes for an extra kick!
