We’re back BABY! The school year is in full swing and that means the whole family is once again busy with sports, work, school activities, and just all around life craziness. Thankfully, I have a recipe to share with you that will make those weeknight dinner routines much more manageable and wholesome than you might think possible! This Sour Cream Pasta recipe is a low mess, no stress dinner that uses easily accessible ingredients and is full of home cooked flavor.

Sour Cream Pasta boasts a simple creamy sauce that will make you think twice about buying pasta sauce out of a jar. (When your homemade cream sauce tastes 10 times better and is just as easy to bring together, your decision will be very easy to make.)  With tangy onions, sauteed garlic, and the full flavor of smoky bacon, you cannot go wrong when trying out this new recipe.

What Do I Need To Make Sour Cream Pasta?

  • 16 oz linguine or other pasta of your choice
  • 8- 10 slices bacon, cut into pieces
  • 2 cloves garlic
  • 2 Tablespoons all-purpose flour
  • 1 1/2  cups milk
  • 1 cup sour cream, full fat (Don’t skimp out on this! Full fat sour cream will ensure your pasta is creamy and delicious!)
  • 1 bunch green onions chopped, white and green parts divided
  • 1 1/2 teaspoon onion powder
  • 1 teaspoon seasoned salt
  • 1/2 teaspoon ground black pepper

Step by Step Instructions:

Bacon pieces are cooked in a skillet and stirred with a spatula.

1. Cook the pasta as per package instructions. Drain with a colander and keep aside, but reserve some of the pasta water for loosening the sauce later if needed. 

    2. In a skillet, fry the bacon pieces until crisp. Remove the bacon pieces, but leave the bacon grease in the skillet. 

    The green onions are cooked in the bacon grease in the same skillet.

    3. Add the garlic and white parts of green onion to the skillet and cook for 1-2 minutes or until fragrant. 

    Flour is stirred in to the onions and bacon grease.

    4. Add the flour to the skillet while whisking constantly so it doesn’t clump together or burn. Cook for another minute or two.

    Milk is poured into the skillet.

    5. Add the milk to the pan, whisking thoroughly, and let the sauce thicken. 

    The sour cream has been stirred into the skillet with the spatula.

    6. Stir in the sour cream. 

    The pasta, bacon pieces, and green onions are added to the skillet.

    7. Add the cooked pasta, reserved bacon, and green onion tops and mix together. If the pasta is too thick, add a bit of the pasta water to thin the sauce until you get the consistency you desire.
